Description

Uda (Negro pepper) and calabash nutmeg, the two dried spices that give pepper soup its smoky depth, ground with dried chilli (Scotch bonnet if you can get it) and ground ginger. Stir into a pot with fresh garlic and country onion (or a regular onion), then simmer with goat, fish, or chicken. Featured in Episode 4. Dry blend, shelf-stable β€” adapted from the original recipe by dropping the fresh chilli, garlic, ginger, and onion base; add fresh garlic and onion yourself. Sourced from general research rather than the book, worth double-checking before finalising.

Pepper Soup Spice — the dried aromatic base of Sierra Leonean and Liberian pepper soup.

  • 2 tbsp ground uda (grains of selim)
  • 1 tbsp ground calabash nutmeg
  • 1 tbsp ground dried chilli (Scotch bonnet if you can get it)
  • 1 tbsp ground ginger

Grind together. Add fresh garlic and country onion (or a regular onion) yourself when you cook.

The historical source gives the ingredients, not exact ratios — these are traditional proportions as a starting point. Adjust to taste.

Pepper Soup, served with Dumboy

  1. Simmer goat, fish or chicken with the spice base, fresh garlic and onion until the meat is tender and the broth is fragrant and hot.
  2. Separately, boil cassava and pound it until smooth and stretchy — dumboy.
  3. Serve the soup with the dumboy alongside, pulled from the same bowl.

The same Scotch-bonnet-and-ginger base also carries cassava leaf stew and groundnut soup.
