Description

Dry-roasted sesame seeds, gochugaru (Korean chilli flakes), sugar, garlic powder, and dried spring onion. Mix with soy sauce, toasted sesame oil, and rice vinegar to bring it back to the dipping sauce this is based on — classically served with mandu dumplings — or use dry as a rub on grilled meats. Featured in Episode 24, opening the East Asia sub-arc. Dry blend, shelf-stable — adapted from a soy-based sauce; this version is the dry seasoning base only, missing the soy sauce, sesame oil, and rice vinegar that make up most of the original. Contains sesame.

Yangnyeom Sesame Rub — the dry seasoning base behind Korea’s yangnyeomjang dipping sauce. Exact quantities.

  • 2 tsp white sesame seeds, dry-roasted until golden
  • 2 tsp gochugaru (Korean chilli flakes)
  • ½ tsp caster sugar or honey
  • 1 crushed garlic clove
  • 1 sliced spring onion

To make the full sauce, mix with 3 tbsp soy sauce, 1 tbsp toasted sesame oil and ½ tsp rice vinegar. Keeps in the fridge up to a week. Or use the dry rub straight on grilled meats.
